How do I jobshadow jobs if I am already out of highschool and would it seem weird?

Well I am thinking about becoming a plastic surgeon, or an oral and maxillofacial surgeon. I was wondering if I am already out of high-school can I do job-shadowing because I know high-school kids have to do it alot for classes and stuff but I don’t have high-school classes anymore. So how would I job shadow these two jobs and can I still do it or would it seem weird?
